Happy Mother’s Day: A GFCF Breakfast Delight

This morning I awoke to my beautiful five-year-old son running into our bedroom announcing “I made my bed! I made my bed! Without being asked. I can’t do yours yet since you’re still in it though…” With a little side head tilt he implied that I should get up so he could do his good Mother’s Day deed… Hum.. well, I’d rather get a little extra Mother’s Day sleep than have my bed made…. So my husband quietly took him out to play with Legos and I got to sleep until 8:30!!! Woot!

When I woke up the house was full of yummy smells. My husband was making me a wonderful GFCF mother’s day breakfast. He made a whole lot of stuff I usually don’t take the time to make during rushed weekday mornings. So I thought I’d list them here so his GFCF research could be enjoyed by all.

Bob’s Red Mill Gluten Free Pancakes (Made as per package directions, just with Vanilla Almond milk instead of cow’s milk. He used Blue Diamond Almond Breeze Vanilla)

Applewood Farms Organic Hardwood Smoked Turkey Bacon (The package lists “lactic acid” as an ingredient, but this is actually not a milk based ingredient. On the Applewood Farms website they explain it in detail, but the quick answer is that their turkey bacon is safe for milk allergies.)
